Tasting Notes
Discovering the Terroir
A Legacy Continued: From Exploration to Return Following the spring harvest of 2020, an unexpected global pause disrupted our rhythm. Unable to physically return to the mountains, we shifted our focus to studying the fundamental nature of this high-altitude ancient wild tea forest. During this period of stillness, we realized a core truth: wild tea trees are never static. They constantly evolve with the climate, the soil, and the passage of time. In 2023, we finally returned to Doi Saket, Chiang Mai, rebuilt our team, and stepped back into the primal forest. By 2024, we resumed our collaboration with local villagers for the harvest. However, rather than rushing to market, we exercised restraint. We dedicated an entire year strictly to observing, recording, and analyzing how these towering ancient trees had transformed over the years. After a long period of patience and accumulation, we achieved a new breakthrough in the spring of 2025. The 2025 Spring Collection This year, pouring our renewed understanding of the trees into the craft, we present three core creations: Black Tea , Oolong Tea (Semi-fermented) , and Green Tea . All originate from the exact same high-altitude ancient wild forest, yet through tailored craftsmanship, they deliver three entirely distinct and striking flavor profiles.
